RAF Schleswigland - Cafe Bauernshanke

The Café Bauernschanke was just over the road from the RAF Schleswig airfield and was reputed to have served the best Ochsenschwanzesuppe (oxtail soup) and Bauernfruhstuck (Farmer's Breakfast) in North Germany. These were favourite dishes of Jim Wingett, amongst many others. 
 

The cafe was operated by Agethe (Aki) Uetti, a dear friend of Jim Wingett, and closed it's doors for business only in 2003. Aki, now 86 years old, still lives there today.  Through this website and the kind assistance of Schleswig friend Heinz Johanssen, Aki was reunited with Jim Wingett who telephoned her from England just before Christmas 2005 for a long chat.

Recipe: Bauernfruhstuck (Farmers Breakfast)
Serving Size  : 4   Main Dish

Boil unpeeled potatoes 30 minutes.  Rinse under cold water, peel and set aside to cool.  Slice  potatoes.  In a large fry pan cook bacon until transparent.  Add the potato slices; cook until lightly browned. Meanwhile blend eggs with milk and salt.  Stir in the cubed ham.  Cut the tomatoes into thin wedges; add to the egg mixture.  Pour the egg mixture over the potatoes in the fry pan.  Cook until the eggs are set.  Sprinkle with chopped chives and serve at once.
